  • 3 cups cooked rotini pasta Cook according to package instructions
  • 1 cup cherry tomatoes, halved
  • 1/2 cup sliced olives
  • 1/2 cup diced cucumber
  • 1/2 cup Italian dressing Use high-quality for best flavor
  • 1/2 cup mozzarella cubes Use dairy-free cheese for vegan version

Preparation

  • Cook the rotini pasta according to the package instructions. Once cooked, drain the pasta and rinse it under cold water to cool down. Set aside.
  • In a large mixing bowl, combine the cooled pasta, halved cherry tomatoes, sliced olives, and diced cucumber.
  • Add the mozzarella cubes to the bowl.
  • Pour the Italian dressing over the ingredients in the bowl.
  • Toss everything together until the pasta and vegetables are evenly coated with the dressing.
  • Cover the bowl with plastic wrap or a lid and refrigerate for at least 1 hour to allow the flavors to meld together.
  • Before serving, give the salad a quick toss to redistribute the dressing. Enjoy!

Notes

Store in an airtight container in the refrigerator for up to 3 days. If the salad seems dry after storing, refresh it with a little more Italian dressing before serving.
