Ingredients
  

Main Ingredients

  • 1 lb boneless, skinless chicken breast Cut into bite-sized pieces
  • 1 cup cooked rice (white, brown, or cauliflower) Cook according to package instructions
  • 1 cup mixed veggies (broccoli, bell peppers, carrots) Use fresh or frozen to your preference
  • 2 tablespoons olive oil For sautéing the chicken
  • to taste Salt and pepper Season generously

For the Sauce

  • 1/2 cup mayonnaise
  • 2 tablespoons sriracha Adjust for desired spice level
  • 1 tablespoon honey For sweetness
  • 1 teaspoon garlic powder
  • 1 teaspoon lime juice

Instructions
 

Preparation

  • Cook the rice according to the package instructions and set aside.
  • Cut the chicken breast into bite-sized pieces and season with salt and pepper.

Cooking Chicken

  • In a large skillet, heat olive oil over medium-high heat. Add the chicken and sauté until golden brown and cooked through, about 6-8 minutes.

Making the Sauce

  • Mix mayonnaise, sriracha, honey, garlic powder, and lime juice in a small bowl. Taste and adjust if necessary.

Combining Ingredients

  • Once the chicken is cooked, toss in mixed veggies and cook for an additional 2-3 minutes until tender.
  • Remove from heat and pour the sauce over the chicken and veggies, stirring to coat.
  • Serve the Bang Bang Chicken over rice and garnish as desired.

Notes

For extra crunch, add chopped peanuts or toasted sesame seeds. To store, cool to room temperature and place in an airtight container in the fridge for up to 3 days.
