Easy Baked Chicken and Vegetables

  • 1 lb chicken breast Skinless, boneless
  • 2 cups broccoli florets Fresh or frozen
  • 1/2 cup carrots, sliced
  • 2 tablespoons olive oil Plus more for drizzling
  • 1 teaspoon garlic powder
  • to taste Salt and pepper
  • 1 tablespoon soy sauce Optional, for added flavor

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a bowl, mix the olive oil, garlic powder, salt, and pepper.
  • Add the chicken breast to the bowl and coat it with the olive oil mixture.
  • On a baking sheet, place the chicken in the center and arrange the broccoli and carrots around it.
  • Drizzle the vegetables with a bit of olive oil and sprinkle with salt and pepper.

Baking

  • Bake for 20-25 minutes, or until the chicken is cooked through and the vegetables are tender.
  • If using soy sauce, drizzle it over the chicken and vegetables before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Make sure the dish is completely cooled before sealing it up. To reheat, pop it in the microwave for a few minutes or warm it in the oven.
