  • 1 pound boneless, skinless chicken breasts Cut into strips
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 8 ounces mushrooms, sliced Can use cremini or shiitake for variation
  • 1 cup chicken broth
  • 1 cup sour cream For creaminess
  • 2 tablespoons flour To thicken the sauce
  • 2 tablespoons olive oil For sautéing
  • 1 teaspoon paprika
  • to taste Salt and pepper

  • Fresh parsley optional for garnish

Preparation

  • Start by cutting the chicken breasts into strips.

Cooking

  • In a large skillet, heat the olive oil over medium heat. Add the chopped onions and minced garlic. Sauté until the onions are translucent.
  • Next, add the chicken strips to the skillet. Cook until the chicken is browned on all sides.
  • Add the sliced mushrooms to the skillet and cook until they are soft.
  • Sprinkle the flour over the chicken and mushrooms. Stir to coat everything evenly.
  • Slowly pour in the chicken broth, stirring constantly to avoid lumps. Add the paprika, salt, and pepper. Bring the mixture to a gentle simmer.
  • Reduce the heat to low and stir in the sour cream. Cook for an additional 5 minutes, allowing the sauce to thicken.
  • Taste and adjust seasoning if necessary.

Serving

  • Serve hot, garnished with fresh parsley if desired.

Notes

For extra flavor, add a splash of white wine when cooking the chicken. Make sure not to overcook the chicken to keep it tender. You can store leftovers in an airtight container for up to 3 days, or freeze for up to 2 months.
