  • 1.5 lbs Yukon gold potatoes, cut into 1-inch pieces Cut into even sizes to ensure even cooking.
  • 1 lb asparagus, trimmed
  • 4 cloves garlic, minced
  • 1/4 cup olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt Adjust to taste.
  • 1/4 teaspoon black pepper Adjust to taste.
  • 2 tablespoons lemon juice
  • 2 tablespoons chopped fresh parsley, for garnish

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a large bowl, toss together the potatoes, asparagus, minced garlic, olive oil, oregano, salt, and pepper until everything is well coated.
  • Spread the mixture in a single layer on a large baking sheet.

Cooking

  • Roast in the oven for 20-25 minutes, or until the potatoes are tender and the asparagus is crisp-tender, flipping halfway through the cooking time.
  • Remove from the oven and drizzle with lemon juice. Garnish with fresh parsley and serve immediately.
