  • 4 pieces chicken thighs or breasts Can be substituted with turkey or pork
  • 1 cup long-grain rice Brown rice can be used for a healthier option; adjust cooking time
  • 1 cup chicken broth Ensure it is gluten-free if needed
  • 1 cup heavy cream
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • to taste Salt and pepper
  • 1 tablespoon olive oil
  • as needed Chopped parsley for garnish

Instructions
 

Preparation

  • In a large skillet, heat olive oil over medium heat.
  • Season the chicken with salt, pepper, and paprika, then add it to the skillet. Cook until browned on both sides.
  • Remove the chicken and set it aside.
  • In the same skillet, add the chopped onion and garlic, and sauté until translucent.
  • Stir in the rice and toast it for 1-2 minutes.

Cooking

  • Add the chicken broth and cream, whisking to combine.
  • Return the chicken to the skillet.
  • Bring to a simmer, cover, and reduce the heat to low.
  • Cook for 20-25 minutes, or until the rice is tender and the chicken is cooked through.

Serving

  • Garnish with chopped parsley and serve warm.

Notes

Make sure to brown the chicken well for richer flavor. You can add vegetables like peas or bell peppers when cooking the onions for extra nutrition. If you prefer a spicier dish, add some cayenne pepper or red pepper flakes.
