Dump-and-Bake Chicken Tzatziki Rice

Ingredients
  

For the main dish

  • 1.5 lbs Chicken breasts or thighs
  • 3 cups Rice
  • 1 cup Chicken broth

For the tzatziki sauce

  • 1 cup Greek yogurt
  • 1 Cucumber, grated
  • 2 cloves Garlic, minced
  • 2 tbsp Fresh dill
  • 2 tbsp Lemon juice

Instructions
 

Preparation

  • Preheat your oven to 375°F and grease a casserole dish.
  • Spread the rice evenly in the bottom of the dish.
  • Place the chicken on top of the rice and season it with salt and pepper.
  • In a bowl, mix the Greek yogurt, grated cucumber, minced garlic, fresh dill, and lemon juice to make the tzatziki sauce.
  • Spoon the tzatziki mixture over the chicken.
  • Pour the chicken broth over the entire dish and cover it with foil.

Cooking

  • Bake for 45–50 minutes or until the chicken is cooked through and the rice is fluffy.

Notes

Serve hot, garnished with extra fresh dill or cucumber slices. Pairs well with a green salad or warm pita bread. For extra flavor, marinate the chicken in the tzatziki sauce for a few hours before cooking. Brown rice can be used for a healthier option; adjust cooking time accordingly.
