Ingredients
  

Main Ingredients

  • 6-8 pieces chicken thighs or 4-5 breasts Use thighs for more flavor or breasts for a leaner option.
  • 1 tbsp paprika
  • 1 large shallot Chopped.
  • 1 piece green chili Chopped; adjust spice level to taste.
  • 1 tbsp minced garlic
  • 1 tbsp minced ginger
  • 200 ml chicken stock Can substitute with vegetable stock.
  • 400 ml coconut milk
  • 160 ml coconut cream
  • 1 tbsp dark soy sauce
  • 1 tbsp fish sauce
  • 1 bunch coriander Chopped, for garnish.
  • 1 unit lime zest & juice From 1 lime, for flavor.
  • 1-2 tbsp olive oil For sautéing.
  • to taste salt and pepper

Instructions
 

Preparation

  • In a large pan, heat 1-2 tbsp of olive oil.
  • Add the chicken and season it with salt, pepper, and paprika. Cook until the chicken is browned.
  • Add the shallot, green chili, garlic, and ginger to the pan. Sauté until fragrant.

Cooking

  • Pour in the chicken stock, coconut milk, and coconut cream, stirring to combine.
  • Add the soy sauce and fish sauce, then bring it to a simmer.
  • Cook until the chicken is fully cooked through and the sauce has thickened slightly.
  • Stir in coriander and lime zest & juice before serving.

Notes

Serve hot over rice or alongside fresh bread. Garnish with extra coriander or lime wedges. If you have leftovers, let them cool and store in an airtight container in the fridge for up to 3 days or freeze for 2 months.
