  • 1 lb chicken breast, cooked and diced Can use leftover or rotisserie chicken.
  • 1 cup corn Canned or fresh corn works well.
  • 1/2 cup mayonnaise Check for gluten-free options if needed.
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder Adjust to taste.
  • 1/4 teaspoon garlic powder
  • to taste Salt and pepper Season to your preference.
  • 1/4 cup chopped cilantro
  • 1/4 cup crumbled feta cheese or cotija cheese (optional) Can be omitted for a dairy-free version.

Instructions
 

Preparation

  • In a bowl, mix the mayonnaise, lime juice, chili powder, garlic powder, salt, and pepper to create the dressing.
  • In a large bowl, combine the cooked rice, diced chicken, corn, and cilantro.
  • Pour the dressing over the mixture and toss until everything is well-coated.

Notes
