  • 2 pieces chicken breasts, cubed
  • 2 pieces sweet potatoes, peeled and cubed
  • 2 tablespoons olive oil

  • to taste pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Fresh parsley, for garnish (optional)

Instructions
 

Preparation

  • Preheat the oven to 400°F (200°C).
  • In a bowl, toss the cubed sweet potatoes with 1 tablespoon of olive oil, salt, pepper, garlic powder, and paprika.
  • Spread the sweet potatoes on a baking sheet and roast for 20-25 minutes, or until tender.

Cooking

  • In a skillet, heat the remaining olive oil over medium heat.
  • Add the cubed chicken breasts to the skillet, season with salt and pepper, and cook until golden and fully cooked, about 6-8 minutes.

Serving

  • Serve the chicken over the roasted sweet potatoes, garnished with fresh parsley if desired.

Notes

For the best results, cut the sweet potatoes into similar-sized cubes. Avoid overcrowding the baking sheet. Marinating the chicken ahead of time could enhance its flavor. Other vegetables like bell peppers or broccoli can be added for more nutrients.
