  • 1 lb chicken breast Preferably boneless
  • 4 cups chicken broth Homemade if possible for richer flavor
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 cup orzo pasta Can substitute with other small pasta
  • 2 whole lemons, juiced Adjust to taste if desired
  • to taste salt and pepper
  • as needed olive oil For sautéing
  • as needed fresh parsley, for garnish

Preparation

  • In a large pot, heat olive oil over medium heat. Add the onions, carrots, and celery, and sauté until the vegetables are tender.
  • Stir in the garlic and cook for an additional minute.
  • Add the chicken broth and bring to a boil.

Cooking

  • Add the chicken breast and orzo pasta. Cook until the chicken is cooked through and orzo is tender, about 10-12 minutes.
  • Remove the chicken, shred it, and return it to the pot.
  • Stir in lemon juice and season with salt and pepper.
  • Serve hot, garnished with fresh parsley.

Notes

For optimal flavor, consider using homemade chicken broth and adjusting the lemon juice based on your preference. You can also add spinach or kale near the end of cooking for added nutrition and color.
