  • 1/2 cup honey Adjust the quantity based on sweetness preference.
  • 1 tablespoon hot sauce Adjust to taste.
  • 4 cups mixed greens Substitute with spinach or kale if desired.
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, sliced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup feta cheese (optional) Can be omitted for a lighter salad.
  • Salt and pepper to taste
  • Olive oil (for dressing)

Preparation

  • In a small bowl, whisk together honey and hot sauce until well combined.
  • In a large bowl, combine the shredded chicken, mixed greens, cherry tomatoes, cucumber, and red onion.
  • Drizzle the honey hot sauce mixture over the salad.
  • Toss gently to combine.
  • Top with feta cheese, if using, and season with salt and pepper to taste.
  • Serve immediately with a drizzle of olive oil.

Notes

Serve immediately for the best taste. You can add more toppings like avocado or nuts. Store leftovers in an airtight container in the refrigerator for up to 2 days. Keep the dressing separate to prevent sogginess. Before serving the leftovers, give it a good toss and add more olive oil if needed.
