  • 1 cup rice Any variety of rice can be used.
  • 2 tablespoons butter For a vegan option, use olive oil or plant-based butter.
  • 1 large onion, thinly sliced Onions should be caramelized for deeper flavor.
  • 2 cups vegetable or chicken broth Chicken broth will add deeper flavor.
  • to taste Salt and pepper
  • optional Chopped parsley for garnish Adds color and freshness.

Instructions
 

Cooking Onions

  • In a saucepan, melt the butter over medium heat. Add the sliced onions and cook until they are caramelized and golden brown, about 15-20 minutes, stirring occasionally to avoid burning.

Cooking Rice

  • In a separate pot, bring the broth to a boil. Add the rice to the boiling broth, stirring to combine.
  • Reduce the heat to low, cover, and cook the rice according to package instructions until tender, usually about 18-20 minutes.

Combining and Serving

  • Once the rice is done, remove it from the heat and fluff it with a fork. Stir in the caramelized onions and season with salt and pepper to taste.
  • Serve warm, garnished with chopped parsley if desired.

Notes

Leftover Buttery Onion Rice can be stored in an airtight container in the refrigerator for 3-4 days. Reheat with a splash of water.
