Ingredients
  

For the Chicken

  • 4 pieces thin chicken cutlets
  • ½ cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup breadcrumbs
  • ½ cup grated Parmesan cheese
  • 2 tbsp olive oil

For the Sauce

  • 2 tbsp butter
  • 3 cloves garlic, minced
  • ½ cup chicken broth
  • 1 cup heavy cream
  • ¼ cup grated Parmesan (for sauce)
  • to taste Salt & pepper
  • Fresh parsley or thyme for garnish

Preparation

  • Season the chicken cutlets with salt and pepper.
  • Dredge each cutlet in flour, dip it in the beaten eggs, and coat it with a mixture of breadcrumbs and grated Parmesan cheese.

Cooking

  • Heat the olive oil in a skillet over medium heat.
  • Cook the chicken for 3–4 minutes on each side until they are golden and crisp. Transfer the chicken to a plate.
  • In the same skillet, melt the butter and add in the minced garlic; sauté until fragrant.
  • Stir in the chicken broth, heavy cream, and additional Parmesan cheese, letting it simmer until the sauce thickens. Season with salt and pepper to taste.
  • Return the crispy chicken to the skillet, spoon the creamy sauce over the top, and garnish with fresh parsley or thyme.

Notes

Use thin cutlets for even cooking. Ensure the oil is hot enough before adding the chicken to get a nice crispy crust. For a lighter version, bake at 400°F (200°C) for 20-25 minutes instead of pan-frying.
