Ingredients
  

Marinade Ingredients

  • 1 tbsp rice wine vinegar
  • 1 tbsp cold water
  • 1 tsp baking soda
  • 1 tbsp corn starch
  • 2 lbs boneless skinless chicken breast Cut into bite-sized pieces

Cooking Ingredients

  • 2 tbsps sesame oil For frying
  • 3 small garlic cloves (minced)
  • 1 cup chicken broth (low sodium)
  • 1/4 cup soy sauce
  • 1/4 cup hoisin sauce
  • 1 tbsp shaoxing wine Optional but recommended
  • 1/8 cup sugar
  • 2 tbsp corn starch
  • 2 tbsp cold water For slurry
  • 2 cups steamed broccoli florets

Instructions
 

Preparation

  • In a bowl, mix 1 tbsp of rice wine vinegar, 1 tbsp of cold water, 1 tsp of baking soda, and 1 tbsp of corn starch. Add the chicken pieces to the bowl and toss to coat. Let it marinate for about 15-20 minutes.

Cooking

  • Heat 2 tbsps of sesame oil in a large pan over medium-high heat.
  • Add the marinated chicken pieces and cook until they are golden brown and cooked through. Remove the chicken from the pan and set it aside.
  • In the same pan, add 3 minced garlic cloves and sauté for a minute until fragrant.
  • Pour in 1 cup of chicken broth, 1/4 cup of soy sauce, 1/4 cup of hoisin sauce, 1 tbsp of shaoxing wine (if using), and 1/8 cup of sugar. Stir the mixture until the sugar dissolves.
  • In a small bowl, mix 2 tbsp of corn starch with 2 tbsp of cold water to create a slurry. Slowly pour the slurry into the sauce while stirring to thicken it.
  • Once the sauce has thickened, add the cooked chicken and steamed broccoli. Toss everything together to coat in the sauce.

Notes

Serve Chicken and Broccoli hot, over a bed of rice or noodles. Allow leftovers to cool and store them in an airtight container in the fridge for 3-4 days. Reheat on the stove or in the microwave. For extra flavor, let the chicken marinate longer. You can substitute chicken with shrimp or tofu. Ensure broccoli is bright green and tender but still crisp. Add more vegetables like bell peppers or carrots for a healthier variation.
