  • 1 lb chicken breast, sliced
  • 2 medium zucchinis, sliced
  • 2 tablespoons soy sauce Can substitute with tamari for gluten-free
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • to taste Salt and pepper

Garnish (Optional)

  • sesame seeds For garnishing
  • green onions, chopped For garnishing

Instructions
 

Cooking

  • Heat olive oil in a large skillet over medium-high heat.
  • Add the sliced chicken breast and cook until browned and cooked through, about 5-7 minutes.
  • Add the minced garlic and sliced zucchini to the skillet.
  • Stir in the soy sauce and season with salt and pepper.
  • Cook for another 4-5 minutes, or until the zucchini is tender.
  • Serve hot, garnished with sesame seeds and chopped green onions if desired.

Notes

Make sure skillet is hot for a nice sear. Don't overcook the zucchini; it should be tender but still slightly crisp. Feel free to add other vegetables or spices for variety.
