Ingredients
  

Chicken Filling

  • 2 cups cooked chicken, shredded Leftover rotisserie chicken works great.
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, thinly sliced
  • 1 cup cucumbers, diced
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1 cup feta cheese, crumbled Can substitute with goat cheese or cheddar.
  • 1/4 cup fresh parsley, chopped
  • 1 teaspoon oregano
  • to taste Salt and pepper

For the Tacos

  • 8 small tortillas
  • to taste Tzatziki sauce (optional) Can be drizzled on top.

Instructions
 

Preparation

  • In a large bowl, combine the shredded chicken, cherry tomatoes, red onion, cucumbers, olives, feta cheese, parsley, oregano, salt, and pepper. Mix well.
  • Warm the tortillas in a pan or microwave until pliable.

Assembly

  • Spoon the chicken mixture onto each tortilla.
  • If desired, drizzle with tzatziki sauce.
  • Fold the tortillas and serve immediately.

Notes

Serve while warm and consider adding toppings like sliced avocado or hot sauce. Leftover chicken mixture can be stored for up to three days in the refrigerator.
