  • 4 pieces boneless, skinless chicken breasts
  • 1 cup fresh blueberries Can also use frozen blueberries.
  • 2 tablespoons fresh thyme, chopped Fresh thyme is preferred; dried thyme can work in a pinch.
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • Salt and pepper to taste
  • 1 tablespoon balsamic vinegar (optional) Use for added flavor.

Preparation

  • Preheat the oven to 375°F (190°C).
  • In a small bowl, mix olive oil, honey, chopped thyme, salt, and pepper.
  • Rub the mixture over the chicken breasts and place them in a baking dish.
  • Scatter the fresh blueberries over the chicken.
  • Drizzle balsamic vinegar over the top if using.

Cooking

  • Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  • Let rest for 5 minutes before serving.

Notes

Serve warm with a side of steamed vegetables, rice, or a fresh salad. Store leftovers in an airtight container in the refrigerator for up to 3 days. Can be frozen for longer storage.
