Ingredients
  

Vegetables

  • 1 head cauliflower, chopped
  • 1 head broccoli, chopped
  • 2 medium carrots, sliced

For the Sauce

  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups milk
  • 2 cups shredded cheese (cheddar or your choice) Cheddar is most common, but other types can be used.
  • Salt and pepper to taste

Topping (optional)

  • Bread crumbs For topping, optional.

Preparation

  • Preheat the oven to 375°F (190°C).
  • Lightly steam the cauliflower, broccoli, and carrots until just tender.

Making the Sauce

  • In a saucepan, melt the butter over medium heat.
  • Stir in the flour and cook for 1 minute.
  • Gradually whisk in the milk and cook until the sauce thickens.
  • Remove from heat and stir in the cheese until melted.

Combining and Baking

  • Combine the steamed vegetables with the cheese sauce.
  • Transfer to a baking dish, sprinkle with bread crumbs if using, and bake for 25-30 minutes until bubbling and golden.

Notes

Serve hot with roasted meats or a side salad. For extra flavor, add fresh herbs before serving. Ensure not to overcook the vegetables when steaming.
