Instructions
 

Preparation

  • Chop the kielbasa into bite-sized pieces.
  • Cut the bell peppers into strips and slice the baby potatoes in half.

Cooking

  • In a large pan, heat the olive oil over medium heat.
  • Add the kielbasa to the pan and cook until browned, about 5 minutes.
  • Toss in the garlic and cook for an additional minute, being careful not to burn it.
  • Add the bell peppers, baby carrots, and baby potatoes to the pan.
  • In a small bowl, mix together the honey and soy sauce. Pour this over the vegetables and kielbasa.
  • Stir everything well to ensure the sauce coats all the ingredients.
  • Cover the pan and let it cook for about 15-20 minutes, stirring occasionally, until the veggies and potatoes are tender.
  • Once cooked, sprinkle with fresh parsley or green onions before serving.

Notes

This dish can be served hot right from the pan. It pairs well with a simple side salad or crusty bread. Leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat on the stove or in the microwave, adding moisture as needed. Consider marinating the kielbasa before cooking for extra flavor.
