  • 1 lb grilled chicken Use leftover grilled chicken to save time.
  • 1 cup sweet corn Canned corn can be used, just drain it before adding.
  • 2 cups cooked rice Any type of cooked rice can be used.
  • 1 each bell pepper, diced Feel free to add other veggies like zucchini or cherry tomatoes.
  • 1 each avocado, sliced
  • 1/4 cup cilantro, chopped
  • 1 each lime, juiced Extra lime wedges can be served on the side.
  • to taste Salt and pepper
  • to taste Feta cheese (optional) Can be omitted for a lighter version.

Instructions
 

Preparation

  • Grill the chicken until fully cooked and let it rest before slicing.
  • In a bowl, combine the cooked rice, sweet corn, diced bell pepper, and chopped cilantro.
  • Squeeze lime juice over the mixture and season with salt and pepper.

Assembly

  • Assemble the bowl by adding a portion of the rice mixture, sliced grilled chicken, and avocado.
  • Top with feta cheese if desired.
  • Serve immediately and enjoy!

Notes

If you have leftovers, store them in an airtight container in the fridge for up to three days. Reheat portions in the microwave or on the stove until warmed through. For a spicy kick, add diced jalapeños to the rice mixture.
