  • 1 lb chicken breasts (boneless, skinless)
  • 1/4 cup honey
  • 2 limes juiced
  • 1 tsp chili powder Adjust for spice preference
  • 1/2 tsp cumin
  • Salt and pepper (to taste)

For the Rice

  • 1 cup rice (uncooked)
  • 1 avocado diced
  • 1/2 cup cilantro (chopped)
  • 1/4 cup sour cream

Preparation

  • In a bowl, whisk together honey, lime juice, chili powder, cumin, salt, and pepper.
  • Coat the chicken breasts in the marinade and let them sit for at least 30 minutes to absorb all those vibrant flavors.
  • Prepare 1 cup of rice according to package directions. Once fluffy and tender, set aside to cool.

Cooking

  • Heat your grill or skillet over medium heat.
  • Cook the marinated chicken for about 6-7 minutes on each side until it’s nicely browned and no longer pink inside.
  • Let the chicken rest before slicing.

Assembly

  • In a large bowl, combine the cooked rice, diced avocado, chopped cilantro, and sour cream.
  • Gently fold everything together until well mixed and creamy.
  • On serving plates, spoon a generous scoop of the creamy avocado rice.
  • Top with the sliced honey lime chicken, and drizzle extra lime juice over the top for a tangy finish.

Notes

For extra flavor, let the chicken marinate for 1-2 hours or overnight in the fridge. Use brown rice instead of white rice for a healthier option. If you prefer spicy food, add more chili powder or some chopped jalapeños. Feel free to customize by adding additional toppings like diced tomatoes or corn.
