  • 2 pieces boneless, skinless chicken breasts
  • 1 cup long-grain rice
  • 2 cups chicken broth Use low-sodium if preferred
  • 1 cup heavy cream A lighter alternative can be used
  • 1 tablespoon Cajun seasoning Adjust to taste
  • 1 cup bell peppers, diced Use a mix of colored peppers for better flavor
  • 1 piece onion, diced
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Olive oil for cooking Use as needed

Preparation

  • In a large skillet, heat olive oil over medium heat. Season the chicken breasts with Cajun seasoning, salt, and pepper.
  • Cook the chicken until browned on both sides and cooked through. Remove from skillet and set aside.
  • In the same skillet, add diced onion, bell peppers, and garlic. Sauté until the vegetables are softened.

Cooking

  • Add the rice and chicken broth to the skillet. Bring to a boil, then reduce heat to low and cover.
  • Cook until the rice is tender and has absorbed the liquid, about 15-20 minutes.
  • Stir in heavy cream and return the chicken to the skillet. Cook for an additional 5 minutes, allowing the flavors to meld.

Serving

  • Serve warm, garnished with fresh herbs if desired.

Notes

For extra flavor, marinate the chicken in Cajun seasoning for a few hours before cooking. Can customize by adding vegetables such as spinach or zucchini for more nutrition.
