  • 2 lbs boneless, skinless chicken breasts (or thighs)
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon freshly cracked black pepper
  • 1/2 cup BBQ sauce (plus more for serving) Choose your favorite BBQ sauce for best results.

Preparation

  • Preheat your oven to 400°F (200°C) and prepare a baking tray with non-stick spray or line it with foil.
  • In a small bowl, mix together chili powder, smoked paprika, garlic powder, onion powder, sea salt, and black pepper.
  • Pat the chicken dry using paper towels, then coat both sides generously with the spice rub.

Cooking

  • Bake the chicken uncovered for 20 minutes.
  • Brush BBQ sauce on the chicken and bake for an additional 5-10 minutes until the internal temperature reaches 165°F for breasts or between 175°F to 190°F for thighs.
  • Let the chicken rest for about 5 minutes before serving.

Notes

To enhance flavor, consider marinating the chicken in BBQ sauce for a few hours before cooking. Always use a meat thermometer to check for doneness. For a crispy texture, broil the chicken for a couple of minutes after baking. Leftovers can be stored in an airtight container in the fridge for 3-4 days or frozen for up to 3 months.
