  • 8 pieces chicken thighs, bone-in and skin-on Best flavor and texture.
  • 2 tablespoons olive oil For coating the chicken.

Spices

  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon cayenne pepper Optional for heat.

Preparation

  • Preheat your oven to 425°F (220°C).
  • Pat the chicken thighs dry with paper towels to help the skin get crispy.
  • In a large bowl, mix olive oil, garlic powder, onion powder, smoked paprika, dried thyme, salt, black pepper, and cayenne pepper (if using).
  • Toss the chicken thighs in the bowl until they are well coated with the seasoning mixture.

Cooking

  • Place the chicken thighs skin-side up on a baking sheet lined with parchment paper.
  • Bake in the preheated oven for 35-40 minutes, or until the skin is golden brown and crispy.
  • Let the chicken rest for 5 minutes before serving.

Notes

Serve hot from the oven with your favorite sides like roasted vegetables, mashed potatoes, or salad. For leftovers, store in an airtight container in the fridge for up to 3 days. Reheat at 375°F (190°C) for 10-15 minutes to restore crispiness. Variations: Add lemon zest, Italian herbs, or your favorite spice blend for different flavors.
