Ingredients
  

For the marinade

  • 2 lemons 2 lemons (juiced and zested) Use fresh lemons for better flavor
  • 2 tablespoons 2 tablespoons olive oil
  • 2 cloves 2 cloves garlic (minced)
  • 1 tablespoon 1 tablespoon fresh rosemary (chopped) Can substitute with thyme or basil
  • Salt and pepper to taste

For the chicken

  • 4 pieces 4 boneless, skinless chicken breasts Bone-in chicken can be used; increase cooking time

Instructions
 

Preparation

  • In a bowl, mix lemon juice, lemon zest, olive oil, minced garlic, chopped rosemary, salt, and pepper to create the marinade.
  • Place the chicken breasts in the marinade and let them soak for at least 15 minutes.

Cooking

  • Preheat a skillet over medium-high heat and add a little olive oil.
  • Remove the chicken from the marinade and cook in the skillet for about 6-7 minutes on each side, or until the chicken is cooked through and golden brown.

Serving

  • Serve the chicken garnished with additional lemon slices and rosemary if desired.

Notes

Allow the chicken to marinate longer for a stronger lemon flavor. Make sure the skillet is hot enough before adding the chicken to get a nice sear. Store leftovers in an airtight container in the refrigerator for 3-4 days.
