  • 2 pieces boneless, skinless chicken breasts
  • 1 cup spinach, chopped Fresh spinach recommended for brighter flavor.
  • 1/2 cup cream cheese, softened
  • 1/2 cup mozzarella cheese, shredded
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper

Preparation

  • Preheat the oven to 375°F (190°C).
  • In a bowl, mix together the spinach, cream cheese, mozzarella, Parmesan, garlic, Italian seasoning, salt, and pepper.
  • Cut a pocket in each chicken breast and stuff with the cheese mixture.

Cooking

  • Heat olive oil in a skillet over medium heat and sear the stuffed chicken breasts for 3-4 minutes on each side until golden brown.
  • Transfer the chicken to a baking dish and bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through.
  • Let the chicken rest for a few minutes before slicing and serving.

Notes

Serve alongside a fresh salad, roasted vegetables, rice, or mashed potatoes. Pour a little extra sauce over the chicken for added flavor. Use fresh spinach for better texture and flavor. Let the chicken rest after cooking for juicier meat.
