Greek Chicken Tenders

Ingredients
  

For the Chicken

  • 1.5 lbs boneless, skinless chicken breasts
  • 3 cloves fresh garlic, minced
  • 1/4 cup extra virgin olive oil
  • 1/4 cup freshly squeezed lemon juice
  • 1 tbsp dried oregano
  • to taste Salt and pepper

For the Sauce

  • 1 cup plain Greek yogurt
  • 1/2 cup grated cucumber

Instructions
 

Marination

  • In a bowl or resealable bag, combine chicken, garlic, olive oil, lemon juice, oregano, salt, and pepper. Seal and refrigerate for at least 1 hour (up to overnight).

Cooking

  • Preheat grill at medium-high heat (375°F) or preheat oven to 400°F (200°C).
  • Make the sauce by mixing Greek yogurt and grated cucumber; season with salt and pepper.
  • Cook the chicken by grilling for 5-7 minutes per side until golden brown (internal temperature of 165°F). For baking, place on a greased dish and bake for 20-25 minutes.

Serving

  • Transfer chicken tenders to a platter, drizzle with yogurt sauce, and garnish with fresh herbs.

Notes

Let the chicken marinate for at least one hour for the best flavor. Use fresh herbs if possible, as they will add great flavor to the dish. Make sure the grill is hot before adding the chicken for a good sear.
