  • 4 pieces boneless, skinless chicken breasts
  • 1.5 pounds baby potatoes, halved
  • 1 cup chicken broth
  • 0.5 cup grated parmesan cheese
  • 4 cloves garlic, minced
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions
 

Preparation

  • Wash and halve the baby potatoes; mince the garlic.
  • Rub the chicken breasts with olive oil and season well with Italian seasoning, salt, and pepper.

Cooking

  • Layer the halved potatoes at the bottom of the crockpot, followed by the seasoned chicken.
  • Pour chicken broth over the top, then sprinkle minced garlic and grated parmesan evenly.
  • Cover and cook on low for 6–7 hours or high for 3–4 hours until the chicken reaches an internal temperature of 165°F (75°C).

Serving

  • Serve warm, garnished with fresh parsley if desired.

Notes

Store leftovers in an airtight container in the refrigerator for up to four days. You can freeze the chicken and potatoes for up to three months. Spread seasoning evenly over chicken for best flavor. Add other vegetables like carrots or green beans for extra nutrition. For a crunchier texture, broil chicken briefly after cooking.
