Ingredients

  • 2 lbs chicken breast
  • 1 cup teriyaki sauce
  • 2 tablespoons honey
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 cup bell peppers, sliced Slice into bite-sized pieces for even cooking.
  • 1 cup broccoli florets Cut into bite-sized pieces.
  • Salt and pepper to taste
  • Cooked rice or noodles for serving

Instructions
 

Preparation

  • In a crockpot, combine the chicken breasts, teriyaki sauce, honey, garlic, and ginger.
  • Stir to coat the chicken in the sauce.
  • Add sliced bell peppers and broccoli on top.
  • Season with salt and pepper to taste.

Cooking

  • Cover and cook on low for 360-420 minutes (6-7 hours) or on high for 180-240 minutes (3-4 hours).
  • Once cooked, shred the chicken if desired.

Serving

  • Serve the teriyaki chicken over cooked rice or noodles.
  • Garnish with sesame seeds or green onions, if desired.
  • For a complete meal, consider serving with a side salad or steamed vegetables.

Notes

To store leftovers, cool completely and place in an airtight container. Refrigerate for up to 3-4 days or freeze for up to 2 months. Thaw in the fridge before reheating. If you’d like a stronger ginger flavor, add more grated ginger. For spice, add red pepper flakes to the sauce before cooking.
