  • 1 pound ground hot pork sausage
  • 1 tablespoon salted butter
  • 1/3 cup all-purpose flour
  • 3 1/2 cups whole milk
  • 1 teaspoon black pepper or to taste
  • Salt to taste
  • Pinch of red pepper flakes optional
  • Biscuits for serving

  • In a large skillet, cook the sausage over medium heat until browned and cooked through. Remove from skillet and set aside, leaving the drippings in the skillet.
  • Add the butter to the skillet and let it melt.
  • Stir in the flour and cook for about 1 minute, stirring constantly until it forms a paste.
  • Gradually whisk in the milk, stirring to prevent lumps, and bring to a simmer.
  • Add the cooked sausage back to the skillet, and season with black pepper, salt, and red pepper flakes if desired.
  • Cook until the gravy thickens, about 5-10 minutes.
  • Serve the gravy over warm biscuits.

Notes

Sausage gravy is best served hot over freshly baked biscuits. You can split the biscuits in half and pour the gravy generously on top. This dish pairs nicely with a side of scrambled eggs or fresh fruit for a complete breakfast. Enjoy it with a hot cup of coffee or tea to start your day right! If you have leftovers, let the sausage gravy cool down to room temperature, then transfer it to an airtight container and store it in the refrigerator for up to 3 days. To reheat, warm it gently in a skillet over low heat, adding a splash of milk if it appears too thick.
