Ingredients
  

For the sandwich

  • 2 slices sourdough bread Crusty sourdough is recommended.
  • 2-3 tablespoons basil pesto
  • 4 oz fresh mozzarella cheese Sliced 1/4 inch thick.
  • 1 large ripe tomato Sliced 1/4 inch thick.
  • 8-10 leaves fresh basil
  • 2 tablespoons salted butter Softened.
  • optional balsamic glaze For drizzling.

Instructions
 

Preparation

  • Lay out the slices of sourdough bread and spread a generous layer of basil pesto on one side of each slice.

Layering

  • On one slice of bread (with pesto facing up), layer the fresh mozzarella slices, followed by the tomato slices and fresh basil leaves on top.

Butter the Bread

  • Spread the softened butter on the outside of both slices of bread to create a golden, crispy crust when cooking.

Cooking

  • Heat a skillet over medium heat and place the sandwich in the skillet. Cook until the bread is golden brown and the cheese is melted, about 3-4 minutes on each side.

Serving

  • Remove the sandwich from the skillet, let it cool slightly, slice it in half, and drizzle balsamic glaze over the top if desired before serving.

Notes

Store cooled leftovers in plastic wrap or an airtight container in the refrigerator for up to 2 days. Reheat in a skillet on low heat until warmed through and cheese is melted again. For best flavor, use fresh cheese and experiment with different bread types or add ingredients like spinach or arugula.
