  • 1/4 cup Unsalted Butter Can be omitted for a lighter version.

Instructions
 

Preparation

  • In a bowl, mix the BBQ sauce, honey, olive oil, garlic powder, smoked paprika, and salt and pepper. Add the chicken thighs and coat them well with the mixture. Let it marinate for at least 30 minutes for better flavor.

Cooking Chicken

  • Preheat your oven to 375°F (190°C). Place the marinated chicken on a baking tray and bake for about 25-30 minutes or until fully cooked, turning halfway through for even cooking.

Preparing Potatoes

  • While the chicken is cooking, peel and cut the Yukon Gold potatoes into chunks. Boil them in salted water until soft, which usually takes about 15-20 minutes.

Making the Creamy Sauce

  • Drain the potatoes and return them to the pot. Add the heavy cream, grated Parmesan cheese, butter, and adjustment of salt and pepper. Mash together until smooth and creamy.

Serving

  • Plate the chicken alongside the creamy garlic Parmesan potatoes. Garnish with fresh parsley if desired.

Notes

To enhance the flavor of the chicken, let it marinate overnight if you have time. Use a meat thermometer to check that chicken reaches an internal temperature of 165°F (75°C). For extra creamy potatoes, add more heavy cream or butter to your taste. If you want a bit of crunch, you can broil the chicken for the last 5 minutes of cooking. Feel free to customize by adding vegetables like garlic, chives, or steamed broccoli. For a spicier version, add hot sauce to the BBQ mixture.
