Sauce Ingredients

  • 2 tablespoons Butter (For sautéing garlic.)
  • 3 cloves Minced Garlic (Fresh garlic preferred.)
  • 1 cup Heavy Cream (Use room temperature.)
  • 8 ounces Velveeta Cheese (Can swap for American cheese.)
  • 1 cup Shredded Mozzarella Cheese (Use Monterey Jack or provolone for variation.)
  • 1 tablespoon Chopped Fresh Parsley (For garnish.)

Instructions
 

Cooking the Pasta

  • Begin by boiling water in a large pot. Add the rotini pasta and cook according to package instructions. Drain and set aside.

Preparing the Chicken

  • While the pasta cooks, season the chicken breasts with salt, black pepper, paprika, and Italian seasoning.
  • Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook for about 6-7 minutes on each side until fully cooked. Remove from the skillet and cut into bite-sized pieces.

Sautéing the Garlic

  • In the same skillet, melt butter over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.

Making the Cheese Sauce

  • Pour in the heavy cream, stirring constantly. Add the Velveeta cheese and mozzarella cheese, mixing until the cheese melts and the sauce becomes creamy.

Combining Everything

  • Add the cooked pasta and chicken back into the skillet. Stir well to coat everything in the cheesy sauce.

Garnishing and Serving

  • Once combined, sprinkle with chopped fresh parsley for garnish. Serve hot and enjoy!
