Ingredients
  

Marinade Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 2 each chipotle peppers in adobo sauce, chopped
  • 2 tbsp fresh lime juice
  • 1 tsp garlic powder
  • 1/4 cup fresh cilantro, chopped

Burger Ingredients

  • 1 ripe avocado, sliced
  • 1/2 medium red onion, thinly sliced
  • 4 slices cheddar cheese
  • 4 each burger buns

Preparation

  • In a large bowl, combine the chopped chipotle peppers, lime juice, garlic powder, and cilantro.
  • Add the chicken breasts to the bowl and coat them well with the mixture. Let the chicken marinate for at least 30 minutes for extra flavor.
  • Preheat your grill to medium-high heat while the chicken is marinating.

Grilling

  • Once the grill is hot, place the marinated chicken breasts on it.
  • Cook the chicken for about 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C).
  • In the last minute of grilling, add a slice of cheddar cheese to each chicken breast and close the grill lid to melt the cheese.

Assembly

  • Toast the burger buns lightly on the grill for about 1 minute.
  • Once the chicken is done, place each piece on a bun.
  • Top with slices of avocado and red onion.
  • Close the burgers and they are ready to serve!

Notes

Serve the burgers with a side of crispy fries or a refreshing salad. Add extra lime wedges for a zesty kick! Store any leftovers in an airtight container in the refrigerator for up to 3 days.
