  • 1 lb chicken thighs (boneless and skinless)
  • 16 oz gnocchi (fresh or frozen)
  • 4 cloves garlic (minced)
  • 1 cup heavy cream adds richness
  • 1/2 cup chicken broth for deglazing
  • 1 cup parmesan cheese (freshly grated)
  • 2 tbsp fresh parsley (chopped for garnish)

  • Add a tablespoon of olive oil to a large skillet over medium heat. Let it warm up until it shimmers with heat.
  • Place the chicken thighs in the skillet, searing each side for about 5-7 minutes until they’re golden brown and cooked through.
  • Toss in the minced garlic, stirring for about 30 seconds until fragrant.
  • Gently fold in the gnocchi, allowing them to mingle with the chicken and garlic for 2 minutes.
  • Pour in the chicken broth and heavy cream, scraping the bottom of the pan to release any flavorful bits, and bring it to a simmer for 5 minutes.
  • Mix in the freshly grated parmesan cheese, stirring until it’s melted and the sauce becomes creamy and smooth, about 2-3 minutes.
  • Serve the dish in shallow bowls, topped with fresh parsley.

Notes

Make sure to sear the chicken well for more flavor. If you prefer a thicker sauce, let it simmer longer until it reduces. For extra flavor, add some crushed red pepper flakes or lemon zest.
