  • 1 lb ground turkey
  • 1 package gnocchi (about 16 oz)
  • 1 cup vegetable broth Can substitute with chicken or beef broth.
  • 1 cup spinach, fresh
  • 1 cup cherry tomatoes, halved
  • 1 teaspoon garlic, minced
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil for cooking

Preparation and Cooking

  • In a large skillet, heat olive oil over medium heat.
  • Add ground turkey and cook until browned, about 5-7 minutes.
  • Stir in garlic, onion powder, Italian seasoning, salt, and pepper.
  • Add the gnocchi and vegetable broth to the skillet; bring to a boil.
  • Reduce heat and simmer until gnocchi are cooked, about 3-5 minutes.
  • Add spinach and cherry tomatoes; cook until the spinach is wilted.
  • Serve warm.

Notes

Use fresh ingredients for the best flavor. For a creamier dish, stir in a splash of cream or dairy-free milk at the end. To store leftovers, let the dish cool completely before transferring it to an airtight container. It can be kept in the refrigerator for up to 3 days or frozen for up to 3 months. Reheat in a skillet over medium heat until hot. Add red pepper flakes for heat, if desired.
