  • 3-4 pieces boneless skinless chicken breasts
  • 4 cups fresh carrots, sliced Use fresh carrots for the best flavor.
  • 1/4 cup pure honey Adjust sweetness to taste.
  • 2 tablespoons low-sodium soy sauce
  • 2-3 cloves garlic, minced
  • 2 tablespoons olive oil Plus additional for tossing carrots.
  • Salt and pepper to taste

Preparation

  • Preheat your oven to 400°F (200°C) and prepare a baking dish with nonstick spray or olive oil.
  • Season the chicken breasts generously with salt and pepper on both sides.
  • In a bowl, whisk together honey, soy sauce, minced garlic, and olive oil to create the glaze.
  • Toss sliced carrots in olive oil and salt before arranging them around the seasoned chicken in the baking dish.
  • Pour half of the prepared glaze over the chicken and carrots; reserve the remaining glaze for basting.

Cooking

  • Bake for 25-30 minutes until the chicken reaches an internal temperature of 165°F (74°C), basting with reserved glaze halfway through cooking.

Serving

  • Once your Honey Glazed Carrots & Chicken is ready, serve it hot. Slice the chicken if desired, and serve the glazed carrots on the side or on top.
  • Pair with rice or a fresh salad for a complete meal.

Notes

If you have leftovers, let the dish cool then transfer to an airtight container. Store in the refrigerator for up to three days. It can be reheated in the oven or microwave. For longer storage, freeze for up to three months.
