Main Ingredients

  • 1 lb chicken breast, cooked and shredded Use rotisserie chicken for convenience.
  • 2 cups cooked rice Can substitute with brown rice for a healthier option.
  • 1 can cream of chicken soup
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese Can experiment with different cheese varieties.
  • 1/2 cup chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste Salt and pepper Adjust seasoning to your taste preference.

Optional Topping

  • 1/2 cup breadcrumbs Optional for topping, can use gluten-free breadcrumbs.

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large bowl, combine the cooked chicken, cooked rice, cream of chicken soup, sour cream, chicken broth, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  • Pour the mixture into a greased 9×13 inch baking dish.
  • If desired, sprinkle breadcrumbs on top for added crunch.

Baking

  • Bake in the preheated oven for 30-35 minutes, or until heated through and bubbly.

Serving

  • Serve warm as a comforting family meal.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave. You can freeze unbaked casserole; thaw in the fridge overnight before baking.
