Ingredients
  

Meatloaf Ingredients

  • 2 lbs ground beef (85% or 90% lean) Lean ground beef keeps the meatloaf moist.
  • 1 cup yellow onion (finely diced)
  • 2 large eggs
  • 3 teaspoons garlic (minced)
  • 2 teaspoons ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 cup Italian breadcrumbs
  • cup milk
  • 3 teaspoons fresh parsley (finely chopped)
  • ½ teaspoon salt
  • 1 teaspoon Italian seasoning
  • 1 teaspoon black pepper
  • 1 teaspoon paprika

Glaze Ingredients

  • ¾ cup ketchup For topping.
  • 2 teaspoons apple cider vinegar
  • 2 teaspoons brown sugar
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon salt (for glaze)
  • ¼ teaspoon black pepper (for glaze)

Instructions
 

Preparation

  • Preheat your oven to 350℉ and prepare a baking sheet by lining it with parchment paper. Set aside.
  • In a large bowl, add the ground beef, diced onion, eggs, minced garlic, ketchup, Worcestershire sauce, Italian breadcrumbs, milk, chopped parsley, salt, Italian seasoning, black pepper, and paprika. Mix everything well to combine and let it rest for 5 minutes.

Baking

  • Shape the meat mixture into a loaf and place it in the center of the prepared baking sheet. Bake in the oven for 45 minutes.
  • While the meatloaf is baking, combine the glaze ingredients in a small bowl and mix well.
  • Remove the meatloaf from the oven and spread the glaze evenly on top. Return it to the oven for an additional 15-20 minutes, or until the internal temperature reaches 160˚F.
  • Let the meatloaf rest for 10 minutes before serving.

Notes

Store leftovers tightly wrapped in plastic wrap or aluminum foil in an airtight container for 3-4 days in the refrigerator or freeze for up to 3 months. Reheat in the refrigerator.
