Main Ingredients

  • 1 lb ground chicken Use lean ground chicken for best results.
  • 1/2 cup grated Parmesan cheese Freshly grated is preferred for better flavor.
  • 1 cup mozzarella cheese, shredded For filling the groove on top of the meatloaf.
  • 1 cup breadcrumbs Can use plain or Italian-style breadcrumbs.
  • 1/2 cup marinara sauce For topping the meatloaf.
  • 1 piece egg Acts as a binder for the meatloaf.
  • 1/4 cup chopped parsley Fresh parsley adds flavor and color.
  • 1 tsp garlic powder Can substitute with minced garlic if desired.
  • 1 tsp onion powder Adds depth to the flavor.
  • Salt and pepper to taste Adjust according to preference.

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large bowl, combine the ground chicken, Parmesan cheese, breadcrumbs, egg, parsley, garlic powder, onion powder, salt, and pepper. Mix well.
  • Form the mixture into a loaf shape and place it in a greased baking dish.
  • Using your fingers, create a groove along the top of the meatloaf and fill it with mozzarella cheese.
  • Spread marinara sauce over the top of the meatloaf and sprinkle with additional breadcrumbs.

Baking

  • Bake for 45-50 minutes or until the internal temperature reaches 165°F (74°C).
  • Let it rest for a few minutes before slicing and serving.

Notes

Serve warm, sliced into thick pieces. Goes great with a side of pasta, salad, or steamed vegetables. Drizzle extra marinara sauce if desired. Store leftovers in the refrigerator for up to 3 days or freeze for up to 3 months.
