Main Ingredients

  • 1.5 lbs lean ground beef Use lean beef for a healthier option.
  • 1 cup diced onion
  • 0.75 cup bread crumbs
  • 0.33 cup broth or water Broth adds flavor, but water will suffice.
  • 2 large eggs Bind the ingredients together.
  • 1 tsp tomato paste For added moisture and flavor.
  • 1 tsp garlic powder Can substitute with fresh garlic.
  • 0.5 tsp salt Adjust to taste.
  • 0.25 tsp ground black pepper

Topping

  • 0.75 cup ketchup Use for topping after the initial baking.
  • 1 Tbsp white vinegar Adds tanginess to the sauce.

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C) and line a baking sheet with aluminum foil.
  • In a large bowl, combine ground beef, onion, bread crumbs, broth, eggs, garlic powder, tomato paste, salt, and pepper; mix until just combined.
  • Shape the mixture into a loaf or pack it into a greased loaf pan.

Baking

  • Bake uncovered for about 40 minutes.
  • While baking, mix ketchup and vinegar in a small bowl.
  • After the initial baking time, spread the ketchup mixture over the meatloaf and bake for an additional 10 minutes.
  • Let the meatloaf rest for 10 minutes before slicing.

Notes

Serve warm with creamy mashed potatoes, steamed vegetables, or a fresh salad. Leftover meatloaf can be stored in the refrigerator for up to 3-4 days or in the freezer for up to 3 months.
