  • 1 cup Mushrooms (finely chopped)
  • 1 cup Swiss Cheese (shredded)
  • 1 cup Breadcrumbs (or gluten-free breadcrumbs)
  • 1 small Onion (finely chopped)
  • 1/2 cup Milk (or almond milk)
  • 1 large Egg (or flax egg for a vegan option)
  • 2 tbsp Worcestershire Sauce (or soy sauce)
  • 1 tsp Garlic Powder (or fresh garlic)
  • Salt & Pepper to taste

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, mix the ground beef, chopped mushrooms, Swiss cheese, breadcrumbs, chopped onion, milk, egg, Worcestershire sauce, garlic powder, salt, and pepper.
  • Use your hands or a spoon to mix everything until just combined. Be careful not to overmix.
  • Transfer the mixture to a baking dish and shape it into a loaf.

Cooking

  • Place the meatloaf in the oven and bake for about 1 hour or until cooked through.
  • Let the meatloaf rest for about 10 minutes before slicing. This helps to keep it juicy.

Notes

For a moister meatloaf, add a little more milk or some grated zucchini. If you want extra flavor, sauté the mushrooms and onion before adding them to the mix. To avoid a dry meatloaf, use ground beef with some fat content (like 80/20). Meatloaf can be stored in the refrigerator for up to 3 days and sliced pieces can be frozen for later use.
