Main Ingredients

  • 1 lb lean ground beef Use lean ground beef to reduce fat content.
  • 4 medium Yukon Gold potatoes, diced (about 1.5 lbs) Can substitute with sweet potatoes for different flavor.
  • 1 medium yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 1 pcs bell pepper (red or green), diced
  • 2 tsp olive oil For sautéing.
  • 1 cup beef broth or water Can substitute with vegetable broth.
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp paprika
  • 1 tsp Italian herbs

Preparation

  • Wash and peel the potatoes, then chop them into bite-sized cubes.
  • Finely dice the onion and bell pepper.

Cooking

  • Heat olive oil in a large skillet over medium heat. Add the onion and bell pepper, and cook until softened, about 5 minutes.
  • Push the vegetables to one side of the skillet and add the ground beef on the other side. Cook until browned, about 5-7 minutes, breaking it apart as it cooks.
  • Stir in the minced garlic, salt, pepper, paprika, and Italian herbs; sauté until fragrant, about 2 minutes.
  • Add the diced potatoes to the skillet along with the beef broth or water. Cover and simmer for 15-20 minutes until the potatoes are tender.
  • Adjust seasoning if needed before serving hot.

Notes

Serve straight from the skillet for a casual meal. Pair with a side salad or crusty bread. Store leftovers in an airtight container for 3-4 days in the fridge or freeze for up to 3 months.
