  • 1 medium bell pepper, chopped Any color bell pepper can be used.
  • 1 can diced tomatoes (14.5 oz) Canned tomatoes can be substituted with fresh tomatoes.
  • 2 cups beef broth Homemade or store-bought beef broth works.
  • 2 cups elbow macaroni You can use any type of pasta.
  • 1 tablespoon paprika Smoked paprika adds a nice flavor.
  • 1 teaspoon dried oregano Feel free to use fresh herbs if available.
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional) Cheddar cheese works well.
  • Fresh parsley for garnish (optional) Add for color and flavor.

Preparation

  • In a large pot, brown the ground beef over medium heat.
  • Add the onion, garlic, and bell pepper; cook until softened.

Cooking

  • Stir in the diced tomatoes, beef broth, macaroni, paprika, oregano, salt, and pepper.
  • Bring to a boil, then reduce heat, cover, and simmer for about 15-20 minutes, or until the macaroni is tender.
  • Optional: Stir in shredded cheese until melted.

Serving

  • Serve hot, garnished with fresh parsley if desired.

Notes

For added flavor, sauté the ground beef with spices like cayenne pepper or chili powder. Use whatever vegetables you have on hand, such as zucchini or carrots. For a creamier texture, add a splash of cream or milk at the end.
