Main Ingredients

  • 1 cup uncooked long-grain white rice You can substitute with brown rice; adjust cooking time accordingly.
  • 3 cups low-sodium beef broth Can be substituted with chicken or vegetable broth.
  • 1 small onion, diced Helps to enhance flavor.
  • 4 cloves garlic, minced Do not overcook to avoid bitterness.
  • 3 tablespoons unsalted butter, divided
  • 1 cup shredded cheddar cheese You can use mozzarella or Gouda for different flavors.
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup whole milk Add more if needed for consistency.
  • 1 teaspoon Italian seasoning Enhances flavor.
  • 2 tablespoons chopped fresh parsley (optional) For garnish.

Instructions

Cooking

  • Heat 1 tablespoon of butter in a large skillet over medium heat. Add the diced onion and cook for 3 to 4 minutes until softened and translucent.
  • Add the ground beef to the skillet and cook until browned, breaking it apart with a spatula. Drain excess fat if necessary.
  • Add the minced garlic to the skillet and stir constantly for 1 minute until fragrant. Be careful not to brown the garlic.
  • Stir in the uncooked rice, beef broth, Italian seasoning, salt, and pepper. Bring to a boil, then reduce heat to low. Cover and simmer for 18-20 minutes until the rice is tender and most of the liquid is absorbed.
  • While the rice simmers, melt the remaining 2 tablespoons of butter in a small saucepan over low heat. Add the milk, cheddar, and Parmesan cheese, whisking until smooth and creamy.
  • Pour the cheese sauce into the beef and rice mixture. Stir thoroughly to combine and coat the rice and beef with the sauce.
  • Let cook uncovered for 2-3 more minutes. Sprinkle with chopped parsley before serving if desired.

Notes
