  • 1 lb ground beef Use lean ground beef for a healthier option.
  • 1/2 cup breadcrumbs
  • 1/4 cup onion, finely chopped
  • 1/4 cup milk
  • 1 whole egg
  • 1 tablespoon ketchup For the meat mixture.
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 tablespoon Worcestershire sauce
  • 1/2 cup ketchup For topping.

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a mixing bowl, combine ground beef, breadcrumbs, onion, milk, egg, 1 tablespoon of ketchup, salt, pepper, and Worcestershire sauce.
  • Mix until just combined.
  • Grease a muffin tin and fill each cup with the meat mixture.
  • Top each meatloaf with a spoonful of ketchup.

Baking

  • Bake for 25-30 minutes until cooked through.
  • Let cool for a few minutes before removing from the tin.

Notes

Serve Mini Meatloaf warm, right out of the oven. They pair well with mashed potatoes and steamed vegetables. Store leftovers in an airtight container for up to three days or freeze for up to three months.
