Heavenly Pistachio Raspberry Dream Cake

Ingredients
  

For the Cake

  • 1 cup shelled pistachios, finely ground
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 4 large eggs, room temperature
  • 1 cup granulated sugar for cake batter
  • 1/2 tsp vanilla extract
  • 1/2 cup unsalted butter, melted and cooled

For the Raspberry Layer

  • 2 cups fresh raspberries
  • 1/2 cup granulated sugar for raspberry layer
  • 2 tbsp lemon juice
  • 2 tsp gelatin powder for raspberry layer

For the Cream Cheese Frosting

  • 1 lb cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 3 cups powdered sugar, sifted
  • 2 tsp vanilla extract for frosting

For the White Chocolate Layer

  • 3/4 cup granulated sugar
  • 1/2 cup water
  • 1 tbsp gelatin powder for white chocolate layer
  • 1/2 cup condensed milk
  • 1 cup white chocolate chips
  • Green food coloring

For Decoration

  • Fresh raspberries for decoration
  • Shelled pistachios for decoration
  • Edible gold leaf optional

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Line the bottoms of two 8-inch cake pans with parchment paper.
  • In a bowl, combine the ground pistachios, flour, baking powder, and salt.
  • In another bowl, beat the eggs, granulated sugar, and vanilla extract until the mixture is pale and doubled in size.
  • Gently fold in the dry ingredients and the melted butter.
  • Divide the batter evenly between the two prepared pans and bake for 25 minutes.

Raspberry Layer

  • While the cakes are baking, purée the raspberries with the sugar and lemon juice. Strain this mixture and heat it with the gelatin until dissolved. Allow it to cool until slightly set, then spread it over one layer of the cake.

Cream Cheese Frosting

  • In a separate bowl, beat the cream cheese and softened butter until smooth.
  • Gradually add the powdered sugar and vanilla extract. Spread this mixture over the set raspberry gelée.

White Chocolate Layer

  • Next, mix the sugar, water, and gelatin for the white chocolate layer. Add the condensed milk, then pour it over the white chocolate chips.
  • Mix until smooth. Add green food coloring and let it cool slightly, then pour it over the frosting.

Decoration and Serving

  • Decorate your cake with fresh raspberries, chopped pistachios, and edible gold leaf if desired. Chill the cake until fully set.

Notes

Ensure all ingredients are at room temperature for better mixing. Don’t over-mix the batter; gently fold the ingredients to keep the cake light. Using fresh raspberries will give the cake the best flavor. If not available, frozen raspberries will work too, but thaw and drain them first.
