Ingredients
  

Cheesecake Base

  • 8 oz cream cheese, softened Make sure to soften it for a smooth texture.
  • 1 cup sour cream
  • 1 cup whipped cream For topping.
  • 1/2 cup sugar
  • 1 tsp vanilla extract
  • 1 cup dark chocolate, melted
  • 1 pre-made chocolate cookie crust Store-bought or homemade.

Topping

  • 1 cup cherry pie filling Can use fresh cherries as a variation.
  • Chocolate shavings for garnish

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, beat the cream cheese and sugar until smooth.
  • Add in sour cream and vanilla extract, and mix until well combined.
  • Slowly stir in the melted chocolate until incorporated.
  • Pour the cheesecake mixture into the chocolate cookie crust.

Baking

  • Bake for 30-35 minutes, or until the center is set.
  • Remove from the oven and cool completely.

Finishing Touches

  • Once cooled, spread cherry pie filling on top.
  • Chill in the refrigerator for at least 4 hours before serving.
  • Garnish with whipped cream and chocolate shavings.

Notes

To store leftover cheesecake, cover tightly or place in an airtight container in the refrigerator. Best if consumed within 3-4 days.
