Ingredients
  

Crust

  • 2 cups crushed chocolate graham crackers
  • 1/2 cup unsalted butter, melted

Filling

  • 3 packages cream cheese, softened (8 oz each)
  • 1 cup smooth peanut butter
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1/2 cup heavy cream
  • 2 cups chopped Reese’s Peanut Butter Cups

Instructions
 

Preparation

  • Preheat your oven to 325°F (165°C).
  • In a mixing bowl, combine the crushed graham crackers with the melted butter. Press this mixture into the bottom of a 9-inch springform pan to create a crust.

Filling

  • In a separate bowl, beat the softened cream cheese, peanut butter, sugar, and vanilla extract until the mixture is smooth.
  • Gradually add the eggs one at a time, mixing well after each addition.
  • Stir in the heavy cream and fold in the chopped Reese’s Peanut Butter Cups.
  • Pour this cheesecake mixture over your prepared crust.

Baking

  • Bake the cheesecake in the oven for 55-60 minutes, or until the center is set.
  • After baking, let it cool on a wire rack for about 10 minutes.
  • Run a knife around the edge of the cheesecake to loosen it and allow it to cool for another hour.
  • Once cooled, refrigerate the cheesecake overnight.

Serving

  • Before serving, if you like, you can top it with chocolate ganache and additional Reese’s Peanut Butter Cups for an extra special touch.
  • Serve your Reese’s Peanut Butter Cup Cheesecake chilled, slicing into wedges and plating them.
  • Drizzle with chocolate ganache or add a dollop of whipped cream on top before serving.
